We fermented this Oatmeal Stout out with our house ale yeast before giving it 3 weeks at cellar temp, followed by an additional 3 weeks at lager temp. Total production time on this beer comes to 8 weeks, yielding a rich, velvety, nearly-imperial Oatmeal Stout that we think holds up to a lot of the flavored stouts out there on the market right now, without the use of any flavorings or adjuncts.
